Ingredients:
1 1/2 lb pounds green beans, cleaned and trimmed
16 oz pearl onions
1/4 cup balsamic vinegar
1 tbs. butter
1 tbs. vegetable oil
1/2 tsp. dried thyme
1/2 tsp. ground black pepper
1/2 tsp. salt
1 1/2 tbs. olive oil
1/2 tbs. mustard
3/4 tsp. sugar
Preparation:
- Blanch green beans in large saucepan of boiling water for about 5 minutes. Drain and rinse with cold water.
- In medium saucepan melt butter, add onions, 2 tablespoons vinegar, vegetable oil, thyme, pepper and 1/4 teaspoon salt and stir. Place mixture on a baking sheet and roast in a 400 degree F oven for 35 minutes, stirring occasionally until onions are browned nicely; remove from oven and set aside.
- Whisk together olive oil, mustard, sugar, 2 tablespoons of vinegar, and 1/4 teaspoon of salt.
- Toss the dressing together with the onions and the green beans. Place the mixture in a large casserole dish, cover and bake for 20 minutes in a 175 C (350 F) oven.
