<li>Roll in egg and cracker, and fry in boiling lard. Take up as soon as they are done, and drain perfectly dry.</li>
<li>This is an excellent preparation of potato, and particularly acceptable at breakfast or luncheon.</li>

<li>Slice the meat into 1/4 inch pieces. Carefully wash and chop the leeks, discarding the top few inches (the toughest green part). Peel and mince the garlic. Slowly sauté these ingredients in 1 tablespoon butter. Place in skillet on low heat for 5-10 minutes, then on medium-high until golden and crisp. (Add garlic last and do not allow to brown).</li>
<li>Wash, peel and slice potatoes into quarters. In a saucepan cover potatoes with water and bring to a boil. Add 2 teaspoons salt to water and reduce heat to a simmer, continuing to cook until tender (about 40 minutes). Drain and return potatoes to saucepan, mash potatoes in the still-hot pan while adding chunks of the butter.</li>
<li>When the butter melts, stir in the sour cream. Pour in the cream and milk; add salt and pepper to taste. Sprinkle with chopped chives and/or scallions, and optional cheese, if desired.</li>

5 cups potatoes, peeled, sliced 1/8-inch thick</p>
<p><strong>Preparation:</strong></p>
<ol>
<li>Preheat oven to 175 C (350 F).</li>
<li>Combine <a href="http://www.free-old-time-cooking-recipes.com/old_italian_recipes/italian_white_bechamel_sauce_recipe.htm">italian béchamel sauce (<em>white sauce</em>)</a> with ham, onion, green pepper, cheese and potatoes. Stir gently.</li>
<li>Pour into a buttered 13 x 9 x 2 inch casserole dish. Cover the casserole with aluminum foil.</li>
<li>Bake for 30 minutes.</li>
<li>Uncover and continue baking for 1 hour.</li>

<p><strong>Ingredients:</strong><br />

<ol>

<li>Beat eggs well and mix with the rest of the ingredients.</li>
<li>Drop by spoonfuls on a hot greased spider in small cakes. Turn and brown on both sides.</li>
<li>Serve with apple sauce.</li>
<li>When eggs are very expensive the cakes can be made with one egg. When required for a meat meal, the pancakes may be fried in drippings; the edges will be much more crisp than when fried in butter, which burns so readily.</li>
