Ingredients:
1 cup broccoli, chopped
1/2 cup cheddar cheese, shredded
1/4 cup butter
1/4 cup onion, chopped
1/4 cup all-purpose flour
3/4 cup chicken broth
1/4 tsp. salt
1/4 tsp. pepper
1-1/2 cups milk
ground nutmeg
Preparation:
- Melt butter in large saucepan. Add onions and saute until tender. Stir in flour, salt and pepper. Add broccoli, milk and chicken broth. Bring to a boil, reduce heat, cover and simmer until broccoli is tender.
- Cool some and puree about 2 1/2 cups at a time in blender or food processor. Pour back into pot, add cheese and seasonings. Heat on low heat, stirring constantly.
