Ingredients:
2 cups rice
4 oz ham, diced
2 eggs
8 oz ricotta cheese
8 oz mozzarella cheese, shredded
2 Tbs parmesan cheese
1/2 cup seasoned bread crumbs
salt, pepper
bread crumbs for coating rice balls
olive oil
Preparation:
- Cook rice until sticky. Let cool.
- Combine with ham, eggs, ricotta cheese, mozzarella cheese, parmesan cheese and 1/2 cup seasoned bread crumbs. Season with salt and pepper.
- Using your hands, form the rice mixture into 1-inch balls. Roll in additional bread crumbs.
- In a small, deep skillet, heat enough oil to cover the rice balls (350 degrees F). Fry the rice balls a few at a time, turning as needed to ensure even browning.
- Drain on paper towels.
