Ingredients:
1 lb (0.5 kg) dried salt cod
2 lb (1 kg) potatoes, peeled and cut into 1/4 -inch dice
1 dl white wine
olive oil
garlic
parsley
salt, pepper
Preparation:
- Soak the cod in cold water to cover in refrigerator for at least 24 hours (up to 3 days). Change the water 5 times to remove the salt. Drain and pat the cod pieces dry with a towel.
- Heat oil in a deep skillet, fry cod and garlic.
- Add water and wine. Bring to boil.
- Add potatoes, salt and pepper and cook for 40 minutes. Add parsley.
