Ingredients:
4 egg yolks
120 g sugar
4 egg whites
50 g (1.7 oz) cornstarch
100 g (3.5 oz) flour
4 tbs confectioners sugar
Preparation:
- Beat the egg white, then beat in the sugar and cornstarch until the mixture makes a stiff meringue.
- In a separate bowl, beat the egg yolks.
- Fold in flour.
- Using a pastry bag with a plain ½ inch (1.3 cm) tip, pipe the batter onto the baking sheets.
- Bake 12 to 15 minutes in moderate oven, until the cookies are lightly colored. Allow them to cool before removing them from the paper.
