SAVOIARDI (Lady Fingers) image

Ingredients:
4 egg yolks
120 g sugar
4 egg whites
50 g (1.7 oz) cornstarch
100 g (3.5 oz) flour
4 tbs confectioners sugar


Preparation:

  1. Beat the egg white, then beat in the sugar and cornstarch until the mixture makes a stiff meringue.
  2. In a separate bowl, beat the egg yolks.
  3. Fold in flour.
  4. Using a pastry bag with a plain ½ inch (1.3 cm) tip, pipe the batter onto the baking sheets.
  5. Bake 12 to 15 minutes in moderate oven, until the cookies are lightly colored. Allow them to cool before removing them from the paper.
