Ingredients:
1 pound (1/2 kg) wide egg noodles
3 cups diced ham (leftover baked ham is great)
24 ozs. (700 ml) sour cream
1/2 tsp salt
1/2 tsp pepper
2 eggs well beaten
1 can small green peas
2 tbs butter
1/4 cup seasoned bread crumbs
a dash of paprika for color
Preparation:
- Fully cook egg noodles drain well, mix in sour cream (mix well), add salt and pepper and diced ham, mix well, stir in beaten eggs([its all right if eggs start to cook), mix well, add can of peas, stir well.
- Pour into a baking pan so that mixture is approx. 2 inches thick. Top with 4 1/4 inch thick pats of butter, top with thin layer of bread crumbs and sprinkle with paprika.
- Bake 30 to 40 minutes at 350 degrees or until top gets slightly crunchy.
- Great for use of leftover baked ham, very good reheated
