Ingredients:
300 g (10 oz) cooked rice
3 Tbsp sugar
2 egg yolks
4 Tbsp coconut milk powder
juice of 1/2 lemon
170 g (6 oz) grated coconut (or coconut flakes)
Preparation:
- Mash half of the cooked rice. Combine with remaining rice, sugar, egg yolks, coconut milk powder and lemon juice.
- With moist, but not wet hands, form a 1 to 1 1/2 inches ball of the rice mixture.
- Pour grated coconut into a shallow dish. Roll in each ball to coat.
- Deep fry the rice balls, a few at a time, for 1-2 minutes or until golden brown. Drain on paper towels, dust with powdered sugar and serve hot.
