Ingredients:
250 g (0.5 lb) wild strawberries, washed and hulled
FOR CRUST:
300 g (10 oz) flour
1/2 tsp baking powder
150 g (5 oz) butter
70 g (2.5 oz) sugar
2 egg yolks
FOR MERINGUE:
4 egg whites
240 g (8.5 oz) sugar
Preparation:
- Preheat oven to 175 C (350 F).
- Combine flour, baking powder, butter, sugar and egg yolks to make a dough. Be careful not to over-work the dough, otherwise the crust will not be flaky.
- Bake the pie shell for 10 to 15 minutes or until lightly browned. Let cool.
- To make MERINGUE: Beat egg whites until stiff. Add sugar and continue beating for a short time.
- Put wild strawberries in the baked crust. Place meringue on top. Sprinkle with few drops of water.
- Bake until browned.
