Ingredients:
1 baked homeade pie crust
FILLING:
2 cups milk
3 Tbs cornstarch
1/2 cup sugar
2 eggs
1/4 cup butter
300 g (10 oz) unsweetened chocolate, chopped
1 cup heavy cream
TOPPING:
1 cup heavy cream
1 Tbs powdered sugar
1/2 tsp vanilla extract
Preparation:
- In top of a double boiler heat milk to boiling.
- In a mixing bowl, stir together cornstarch and sugar; beat in eggs.
- Gradually stir half the boiling milk into beaten eggs; return egg mixture to the double boiler, stirring well. Cook for 2 minutes.
- Stir in butter and chocolate until melted. Add 1 cup of the cream.
- Remove from heat. Pour filling into a baked pie crust.
- Chill in refrigerator for about 4 hours.
- TOPPING: In a mixing bowl, beat cream until stiff. Add powdered sugar and 1/2 teaspoon vanilla extract and beat some more. Spread over chocolate cream pie.
