Ingredients:
2/3 cup butter
1 1/2 cups white sugar
1 tsp vanilla
2 3/4 cups all-purpose flour
3 tsp. baking powder
1 tsp. salt
3/4 cup champagne
6 egg whites, stiffly beaten
ICING:
2/3 c. whipping cream
1/4 c. sifted powdered sugar
3 Tbsp. champagne
Preparation:
- Preheat oven to 175 C (350 F).
- Cream butter, add sugar and vanilla. Add flour, baking powder, salt and champagne. Fold in beaten egg whites.
- Pour batter into a greased and flour-dusted pan. Bake until cake tester comes out clean.
- ICING: Whip cream until stiff. Beat in sugar and champagne. Spread smoothly over top and side of the cake.
