Ingredients
- 2 large eggs
- 1/4 cup white sugar
- 3/4 tsp vanilla extract
- 1/2 tsp salt
- 3/4 tsp baking powder
- 2 cups milk
- 1.5 cups mashed bananas, 3 large
- 2.5 cups old fashioned oats
- 8 ounces frozen blueberries
Instructions

In a large bowl, combine eggs, sugar, vanilla, salt, and baking powder. Stir in milk, mashed bananas and oats.

Add frozen blueberries (do NOT thaw blueberries or the mixture will turn purple) and immediately pour into a buttered 8×8 inch baking dish. Bake in the 375 F preheated oven for about 45 minutes.

Serve warm or cold. If well covered, baked oatmeal will keep in the fridge for one week.
If you just dust your fresh or frozen blueberries with some flour it will keep them from turning purple in the recipe,

I believe you could. I use bananas just because I like the taste and sweetness.
