Ingredients:
400 g (0.9 lb) white navy beans
1/2 cup oil
1 onion, finely chopped
100 g (3.5 oz) bacon, chopped
1 tsp paprika
1 Tbsp tomato paste
2 garlic cloves, minced
1 Tbsp flour
2 dried peperoncini (optional)
salt, black pepper
2 sausages, cut into slices
1/2 tsp dry mint or parsley leaves
Preparation:
- Soak beans overnight in water. Drain and rinse beans, then cook beans until tender. Do not overcook. Drain beans, reserving some cooking liquid (about 1 cup).
- In a large skillet, heat the oil, and saute onions and bacon until onions are translucent.
- Add paprika, tomato paste, garlic and flour.
- Add beans together with cooking liquid and peperoncini. Season with salt and pepper. Cook for a short time.
- Put in a casserole, mix beans with sausage slices, sprinkle with mint leaves and bake at 220°C (425 F) for 20 to 25 minutes.
